Wine Country Vinegars introduces a
delicious
new vinegar – Sonomic!
A winemaker, a distiller and a chef put their heads together and created
an extraordinary taste—and they call it Sonomic.
This magical elixir is like a balsamic vinegar, but different. It has
a rich, bright cabernet flavor with a hint of the acid of vinegar. It's
great on a salad, it's a wonderful marinade or finishing sauce for meat,
a dipping sauce for bread or cheese, a splash on fruit and vegetables.
The back label on the bottle isn't big enough to suggest all the possibilities!
The winemaker, Bill Reading of Sonoma Valley Portworks, and the distiller,
Don Payne of Stillwater Spirits, are neighbors at the Foundry Wharf complex
at the end of Second Street in Petaluma . They have collaborated on many
projects, combining their creativity and talent in interesting ways.
Reading specializes in port and other dessert wines; Payne's specialty
is distilled spirits of many kinds. The professional chef is Mike Giacomini,
who is also one of Payne's business partners. “This is a chef's dream” says
Giacomni. “Once you taste it, the fantasies begin on different ways to
use it.”
To capture the essential grape flavors and create a silky texture, Sonomic
is made in small batches in Payne's unique stainless steel vacuum still.
It took the trio more than two years to perfect the process of making
this unique vinegar, to blend sweet and tart and maintain the perfect
texture.
Up until now, Sonomic has only been available in the tasting rooms of
Sonoma Valley Portworks, in Petaluma and Kenwood. Dipping small spoons
into a tiny ramekin of Sonomic, creative and innovative cooks taste the
potion and come under its spell. This is not vinegar in any ordinary
sense of the word. People from as far away as England , Canada and France
have purchased bottles and then called to order more.
The back label says “You've never tasted anything like this!” Now that's
truth in advertising…
